Ingredients:
2 salmon fillets
1 can of young bamboo shoots (225g)
Rice noodles or jasmine rice, for serving
Instructions:
1. Heat a pan over medium heat and add a teaspoon of oil. Once the oil is hot, add the salmon fillets and sear for 3-5 minutes on each side, or until the salmon is cooked to your desired level. Remove the fillets from the pan and set them aside.
2. In the same pan, over medium heat, combine a packet of Wild Rice green curry with a can of bamboo shoots. Stir well and cook for an additional 2 minutes, allowing the flavors to meld.
3. Plate the rice noodles or jasmine rice. Top with the seared salmon fillets and generously spoon the green curry and bamboo shoot mixture over the top.
4. Serve immediately and enjoy!
